Flaky Carrot Tart (Print Version)

# Ingredients:

→ Tart Base

01 - 1 roll of puff pastry
02 - A small block of goat cheese or Billy cheese
03 - 3 to 4 carrots
04 - A handful of shredded cheese (or grated aged goat cheese)

→ Filling Prep

05 - 2 eggs
06 - 2 spoonfuls of thick cream

→ Optional Spices and Herbs

07 - Fresh thyme – to taste
08 - Ground nutmeg – to taste
09 - Fresh parsley – to taste
10 - Sichuan pepper – to taste
11 - Fruit zest – to taste
12 - Ground cumin – to taste
13 - Ground coriander – to taste
14 - Fresh coriander – to taste

# Instructions:

01 - Heat up the oven to 200°C.
02 - Blend the shredded carrots with the goat cheese, eggs, and cream. Toss in the herbs and spices you like.
03 - Spread the puff pastry out and poke it all over with a fork.
04 - Pour the carrot mixture onto the pastry. Sprinkle the shredded cheese over the top.
05 - Bake it for 30 minutes. Let it turn golden brown right at the end.
