Peel the carrots and slice them into rounds. Cook them in the vegetable stock for half an hour or more. Once tender, drain and blend them, then set the mix aside.

In a large bowl, combine whole eggs and cubed goat cheese. Mix in the melted butter, flour, baking powder, and crushed nuts. Finally, stir in the pureed carrots until smooth.

Turn the oven on at 200°C to preheat. Grease and flour an oven-safe dish, then pour in the mixture and spread it evenly. Bake it for 30 minutes at 200°C.
