Sweet Pineapple Lassi (Print Version)

# Ingredients:

01 - 5 thick slices of fresh pineapple, about 1/2 inch each
02 - 1 tablespoon coconut oil
03 - 1 tablespoon unsalted butter
04 - 1 tablespoon light brown sugar
05 - 1/4 teaspoon salt
06 - 1 can (400 ml) of light coconut milk
07 - 225 grams of Greek yogurt
08 - 1/4 teaspoon ground cardamom
09 - A dash of ground cinnamon

# Instructions:

01 - Put a large skillet on medium-high heat and add the butter and coconut oil. Once they're melted, toss in 4 pineapple slices, sprinkle with brown sugar and salt, and cook until golden and caramelized on both sides. It should take roughly 5 minutes per side. Take them out and let them cool for a bit.
02 - Put the caramelized pineapple, yogurt, coconut milk, cinnamon, and cardamom into a blender. Blend until you get a smooth mixture.
03 - Pour into glasses and sprinkle a tiny bit of cardamom over each one. Slice the last pineapple piece in half and place it on top as a garnish. Serve right away.
