Buttery Steak Potatoes (Print Version)

01 - 1 lb golden baby potatoes, cut into quarters or halves
02 - 2 tbsp butter, unsalted
03 - 5 lbs NY strip steak, sliced
04 - 1 tbsp olive oil
05 - 1 tsp dried rosemary
06 - 1 tsp dried thyme
07 - 1 tsp oregano, dried
08 - 3 garlic cloves, finely chopped
09 - Salt and pepper as needed

# Instructions:

01 - In a medium-hot skillet, melt 1 tbsp of butter with olive oil. Toss in the potatoes, garlic, and dried herbs, then sprinkle with salt and black pepper. Let them cook until they’re soft when poked with a fork, about 3–5 minutes. Take the potatoes out and keep them warm.
02 - Pop another tbsp of butter into the same skillet. Add the steak slices and stir them now and then until they’re done just the way you want.
03 - Put the potatoes back in the pan to warm up again. Give it a taste and add a bit more salt or pepper, if needed, before serving.
