Veggie Bites with Broccoli and Carrots (Print Version)

# Ingredients:

→ For the patties

01 - 500g cooked broccoli
02 - 200g shredded carrots
03 - 70g grated parmesan
04 - 1 egg
05 - 1 tablespoon chopped parsley
06 - Salt, black pepper, curry powder, and paprika
07 - 70g breadcrumbs
08 - 6 tablespoons olive oil

→ For the sauce

09 - 1 plain yogurt
10 - ½ finely chopped red onion
11 - 1 teaspoon chopped parsley
12 - 1 teaspoon lemon juice
13 - Salt and pepper to taste
14 - 1 tablespoon olive oil

# Instructions:

01 - Take a small bowl and mix together the yogurt, finely diced red onion, parsley, lemon juice, olive oil, salt, and pepper. Place it in the fridge to chill for later.
02 - Mash up the cooked broccoli and mix it well with the shredded carrots, grated parmesan, egg, parsley, and spices. Keep stirring until the mix feels smooth and even.
03 - Shape the mixture into small patties or croquettes, then roll each one evenly in breadcrumbs.
04 - Preheat your oven to 200°C. Brush the patties with olive oil and pop them in the oven for around 20 minutes, or until they look lovely and golden.

01 - You can make these ahead of time and just reheat them in the oven when you're ready
02 - A great way to get kids to enjoy eating veggies!
