Apple Brie Chicken (Print Version)

# Ingredients:

01 - 4 boneless chicken breasts
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon ground black pepper
04 - 1 Honeycrisp apple, sliced thinly into crescents
05 - 4 ounces of chilled brie, sliced thin

→ Cider Sauce

06 - 1 cup apple cider or juice
07 - 2 tablespoons real maple syrup
08 - 1/2 tablespoon garlic, finely minced (about 2 cloves)
09 - 1 teaspoon Dijon mustard
10 - 2 teaspoons fresh thyme leaves
11 - 1/2 teaspoon kosher salt

# Instructions:

01 - Warm your oven to 375°F. Line your baking tray with parchment or grab a skillet that’s safe for broiling and spray it lightly with nonstick coating.
02 - Cut through each chicken breast horizontally, but don’t slice all the way—leave it hinged. Sprinkle the inside with salt and pepper. Lay 7–9 pieces of apple and 3–4 cold brie slices inside, then fold it shut.
03 - Gently move the stuffed chicken to your prepped baking dish. Cook for about 25–30 minutes until it’s mostly done.
04 - While your chicken’s in the oven, toss all the sauce ingredients into a small pan. Let it bubble on medium heat, stirring occasionally until it thickens—this’ll take around 12–15 minutes.
05 - Turn your oven to broil mode. Brush the sauce generously over the chicken, then broil for 10–12 minutes until the chicken’s internal temperature hits 165°F. Keep an eye on it so the sauce doesn’t burn. Add extra sauce when serving and enjoy warm!
