Tater Tot Burritos (Print Version)

# Ingredients:

01 - 8 large eggs, whisked lightly
02 - 8 breakfast sausage links, casings removed
03 - 2 cups tater tots (frozen)
04 - ⅓ cup half & half
05 - 2 tablespoons olive oil
06 - Salt (Kosher) and freshly ground black pepper

→ Assembly Ingredients

07 - 1 cup Monterey Jack cheese, shredded
08 - 2 Roma tomatoes, chopped small
09 - 8 flour tortillas (8-inch)
10 - ¼ cup fresh cilantro, chopped
11 - 1 (16-ounce) can refried beans
12 - 1 cup cheddar cheese, shredded

# Instructions:

01 - Set your oven to 400°F. Cook frozen tater tots for 20-25 minutes, flipping halfway, until crunchy and golden.
02 - Warm olive oil in a pan over medium heat. Crumble sausage into the pan and cook for 3-5 minutes until browned. Keep about a spoonful of the oil in the pan and drain the rest.
03 - Using the same pan, pour in the eggs and cook on medium heat. Once the eggs just begin to set, stir in the half & half. Sprinkle with salt and pepper, then cook until soft and creamy, about 3-5 minutes.
04 - Take a tortilla and spread refried beans over it. Add layers of tater tots, sausage, eggs, cheeses, tomatoes, and cilantro. Roll it up tightly, tucking the edges in.
05 - Lay the burritos with the seam side down on a tray. Bake for 12-15 minutes at 400°F until everything is warmed and the cheese melts.

# Notes:

01 - Wrap tightly in foil or plastic wrap. Store in freezer for up to 3 months.
02 - To reheat frozen burritos: microwave 1-2 minutes each side. Optionally, crisp them in the oven or a skillet afterward.
