Pulse the oats in a food processor until it’s a fine mix, but not quite flour.

Toss the almond flour, thawed blueberries, almond butter, dates, and vanilla into the processor.

Blend the ingredients until smooth. Don’t overdo it—you don’t want it turning into paste!

Roll the mix into 9 balls. Wet your hands if the mixture sticks.

Coat the balls in shredded coconut (optional step) and chill in the fridge.
