Blueberry energy bites (Print Version)

# Ingredients:

→ Base

01 - 1/2 cup (50 g) almond flour
02 - 3/4 cup (75 g) large oats
03 - 1 tbsp (15 ml) almond butter
04 - 1/2 cup (65 g) partly thawed frozen blueberries
05 - 1 tsp (5 ml) vanilla extract
06 - 2 dates
07 - Shredded coconut (optional)

# Instructions:

01 - Pulse the oats in a food processor until it’s a fine mix, but not quite flour.
02 - Toss the almond flour, thawed blueberries, almond butter, dates, and vanilla into the processor.
03 - Blend the ingredients until smooth. Don’t overdo it—you don’t want it turning into paste!
04 - Roll the mix into 9 balls. Wet your hands if the mixture sticks.
05 - Coat the balls in shredded coconut (optional step) and chill in the fridge.

# Notes:

01 - Store in the refrigerator.
02 - If using dried dates, soak them in hot water for 10 mins first.
