Set your oven to 350°F (175°C). Prep two 9-inch round pans with grease and a dusting of flour.

Mix together cocoa powder, sugar, flour, baking powder, salt, and baking soda in one large bowl.

Toss eggs, vanilla, milk, and oil into the bowl. Beat for 2 minutes at medium speed. Stir in hot water last—it'll look runny.

Pour batter into your pans. Bake the cakes for 30-35 minutes. Stick a toothpick in to check—it should come out nice and clean. Cool in the pans for 10 minutes, then move to wire racks to cool fully.

Once they're completely cool, slice each cake horizontally so you end up with four thin layers.

Use a medium bowl to whisk together heavy cream, powdered sugar, and vanilla. Beat them until you see stiff peaks.

Start stacking: add a layer of cake to a serving plate, then spread 1/2 cup of cherry filling on top. Do this for all the layers, one by one.

Cover the cake's sides and top with whipped cream. Sprinkle some chocolate chips and cherries on top if you'd like.
