Perfect homemade pizza (Print Version)

# Ingredients:

01 - 1/8 teaspoon of dry yeast.
02 - 185g of lukewarm water.
03 - 250g all-purpose or bread flour.
04 - 2g sugar.
05 - 8g salt.
06 - 1/4 cup olive oil.
07 - 1 1/2 cups grated Pecorino cheese.
08 - 3/4 cup shredded mozzarella.
09 - 1/4 cup freshly ground black pepper.

# Instructions:

01 - In a big bowl, stir together the dry bits. Pour in the warm water and combine everything thoroughly.
02 - Cover the mix and let it sit out at room temp for a full day (24 hours).
03 - Preheat your oven to 260°C with a pizza stone or baking tray inside. Give it a good 30 minutes to heat up completely.
04 - Split the dough in half, then roll each piece into circles on a surface with some flour dusted over.
05 - Let the dough sit undisturbed for around 45 minutes.
06 - Brush olive oil evenly over the dough. Add the mozzarella, follow with the Pecorino, and finish with the black pepper.
07 - Pop it in the oven for around 8-10 minutes, or until the crust looks golden and has a nice crisp.
08 - Toast under the broiler for 2 minutes if you'd like a deeper brown on the edges.
