In a big bowl, stir together the dry bits. Pour in the warm water and combine everything thoroughly.

Cover the mix and let it sit out at room temp for a full day (24 hours).

Preheat your oven to 260°C with a pizza stone or baking tray inside. Give it a good 30 minutes to heat up completely.

Split the dough in half, then roll each piece into circles on a surface with some flour dusted over.

Let the dough sit undisturbed for around 45 minutes.

Brush olive oil evenly over the dough. Add the mozzarella, follow with the Pecorino, and finish with the black pepper.

Pop it in the oven for around 8-10 minutes, or until the crust looks golden and has a nice crisp.

Toast under the broiler for 2 minutes if you'd like a deeper brown on the edges.
