Beefy Creamy Pasta (Print Version)

# Ingredients:

01 - 8 ounces of fettuccine pasta.
02 - 1 medium onion, chopped.
03 - 2 cloves of garlic, thinly sliced.
04 - 1 tablespoon of olive oil.
05 - 1 cup of sliced mushrooms.
06 - 1 pound of ground beef.
07 - 1/2 cup of chicken broth.
08 - 1/3 cup of dry white wine.
09 - 1 teaspoon of Italian spice mix.
10 - 1 cup of heavy cream.
11 - 1/3 cup of shredded Parmesan cheese.
12 - Salt and pepper to your liking.
13 - Chopped fresh parsley for garnish.

# Instructions:

01 - Bring a pot of salted water to a boil, Cook fettuccine until just tender but firm, Save some cooking water before draining, Drain the pasta completely.
02 - Toss cooked pasta in the sauce pan, Add Parmesan and mix well, Add starchy pasta water only if the mixture feels dry, Sprinkle parsley, Taste and adjust seasoning.
03 - Cook onions and garlic in oil, Add the ground beef and stir until browned, Add mushrooms and cook a bit more, Pour in the wine to scrape off flavors stuck to the pan, Stir in chicken stock and seasoning mix, Add cream and lower to a simmer.

# Notes:

01 - Turn down the heat before adding cream to avoid curdling.
02 - Wine can be swapped for extra broth.
03 - Pasta cooking water makes the sauce smoother and helps it stick.
04 - You can use ground turkey in place of beef.
