Turn on the oven and preheat it to 180°C with the fan setting. Rinse the zucchini and slice them into half-moon shapes.

Lay the zucchini slices in a baking dish. Put the block of feta right in the middle. Sprinkle some salt, toss on the thyme, and drizzle generously with olive oil.

Pop the dish in the oven and bake for around 30 minutes.

Once it's slightly cooled, grate the zest of your organic lemon over the top. Serve it up with warm toasted bread.
