Shrimp parmesan with chorizo (Print Version)

# Ingredients:

01 - 50g grated parmesan (+ a little more to top later)
02 - 200ml heavy cream

→ Sea Ingredients

03 - 500g peeled shrimp (keep the tails on)

→ Meats

04 - 70g chorizo with the skin removed

→ Herbs and Aromatics

05 - 1 large shallot finely chopped
06 - 1 large garlic clove minced
07 - Chives chopped finely

# Instructions:

01 - Peel the shrimp but leave the tails attached. Take the skin off the chorizo and slice it into half-moons. Chop the shallot and garlic very finely.
02 - Use a non-stick pan to cook the garlic, shallot, and chorizo without oil for a few minutes. Toss in the shrimp and cook a bit longer.
03 - Pour in the heavy cream and sprinkle in the parmesan cheese. Stir softly and let it simmer until the cheese is melted and combined.
04 - Preheat the oven to 200°C. Divide everything into small baking dishes or use a larger one. Sprinkle extra parmesan cheese on top and bake for 15 minutes.
05 - Take it out of the oven, add a nice handful of finely chopped chives on top, and serve right away.

01 - You can skip the oven-baking step, but it’ll taste better if you include it.
02 - Feel free to prep the ingredients ahead of time for convenience.
