Peel the shrimp but leave the tails attached. Take the skin off the chorizo and slice it into half-moons. Chop the shallot and garlic very finely.

Use a non-stick pan to cook the garlic, shallot, and chorizo without oil for a few minutes. Toss in the shrimp and cook a bit longer.

Pour in the heavy cream and sprinkle in the parmesan cheese. Stir softly and let it simmer until the cheese is melted and combined.

Preheat the oven to 200°C. Divide everything into small baking dishes or use a larger one. Sprinkle extra parmesan cheese on top and bake for 15 minutes.

Take it out of the oven, add a nice handful of finely chopped chives on top, and serve right away.
