Rinse and clean the potatoes thoroughly, then poke them all over with a fork. Bake them at 400°F (200°C) for about 45-50 minutes, until soft inside.

Heat a skillet over medium heat and cook the beef until it’s no longer pink. Get rid of any extra grease.

Add the taco seasoning and pour in ½ cup of water. Let it cook for 5 minutes, stirring, until it thickens up a bit.

Cut the baked potatoes open and use a fork to fluff the insides. Pile on the seasoned beef.

Layer on the cheese, sour cream, green onions, and tomatoes. Serve nice and warm!
