Baked fish Provençal (Print Version)

# Ingredients:

→ Fish

01 - 4 slices of any white fish (like cod, haddock, or pollock)

→ Vegetables

02 - 2 red bell peppers
03 - 400g of crushed tomatoes
04 - 1 large red onion
05 - 2 garlic cloves

→ Herbs and Seasonings

06 - 2 sprigs of fresh rosemary
07 - 2 bay leaves
08 - 2 sprigs of fresh thyme
09 - Olive oil
10 - Salt and pepper

# Instructions:

01 - Slice the bell peppers into strips. Finely chop the garlic and red onion.
02 - Cook the red onion and garlic in olive oil for 5 minutes. Stir in the peppers, crushed tomatoes, and herbs. Sprinkle with salt and pepper, and let it simmer for 15 minutes.
03 - Lay the fish slices in a casserole dish. Pour the Provençal tomato sauce on top.
04 - Bake at 200°C for 20 minutes, or until the fish is cooked through.

01 - You can prepare the sauce ahead of time.
02 - You can swap fresh herbs with dried ones if needed.
