Crispy Beef Tacos (Print Version)

# Ingredients:

01 - 2 tablespoons of taco seasoning.
02 - 1 pound of ground beef (85–90% lean).
03 - 1/2 cup of water.
04 - Juice of 1 lime.
05 - 3 minced garlic cloves.
06 - 4 oz. of green chiles, diced.
07 - 8 oz. of colby jack cheese.
08 - 8–10 corn tortillas.
09 - 1/2 to 3/4 cup of Mexican crema.
10 - 2 chipotle peppers in adobo sauce.
11 - 1 teaspoon of honey.
12 - Juice from 1/2 a lime.
13 - 1 garlic clove.
14 - Brush-on oil.

# Instructions:

01 - Set your oven to 425°F. Add oil to two baking trays. Brown the beef until it's fully cooked, then drain off the fat.
02 - Stir in taco seasoning, garlic, lime juice, chiles, and water to the beef. Cook it all until it's dry; mix in one cup of cheese.
03 - Heat the tortillas, then add beef and cheese to one side. Fold the tortilla over and lightly oil the outside.
04 - Place tacos in the oven for 15–20 minutes until the shells are golden and firm.
05 - Blend the crema with chipotles, lime juice, honey, and garlic till creamy. Use it as a dip or topping for your tacos.

01 - Don't stuff too much filling inside.
02 - Stays fresh up to 3 days in the fridge.
