Set your oven to 425°F. Add oil to two baking trays. Brown the beef until it's fully cooked, then drain off the fat.

Stir in taco seasoning, garlic, lime juice, chiles, and water to the beef. Cook it all until it's dry; mix in one cup of cheese.

Heat the tortillas, then add beef and cheese to one side. Fold the tortilla over and lightly oil the outside.

Place tacos in the oven for 15–20 minutes until the shells are golden and firm.

Blend the crema with chipotles, lime juice, honey, and garlic till creamy. Use it as a dip or topping for your tacos.
