Heat up the oven to 375°. Cook macaroni until it's tender, not mushy. Drain, then toss with butter.

Melt the butter in a pan. Blend in the flour and let it cook for a couple of minutes until it turns golden.

Pour the milk in gradually and whisk as you go. Let it simmer and thicken for around 10 minutes.

Lower the heat, toss in the grated cheese, the spices, and the hot sauce. Stir until you get a smooth mixture.

Toss the cooked pasta into the cheese sauce and mix it all together.

Spoon it into a baking dish and sprinkle the remaining cheese on top.

Pop the dish in the oven for 25-30 minutes. If you'd like a crispy top, broil it for a couple of extra minutes.
