Steam the cauliflower until soft. Drain thoroughly.

In a large bowl, mix the mashed cauliflower with the onion, egg, flour, breadcrumbs, Parmesan, mozzarella, parsley, paprika, curry powder, and a pinch of salt and pepper.

Take portions of the mixture and form them into small nugget shapes.

Place the nuggets on a baking tray lined with parchment paper. Lightly brush them with olive oil. Bake at 200°C for about 20-25 minutes, flipping them halfway through, until golden brown.
