Throw the bacon strips into a frying pan (no oil needed) over low heat and let them sizzle for about 4-5 minutes.

Grab a large mixing bowl and combine flour, baking powder, softened butter, egg, salt, pepper, cooked bacon, grated cheese, and crispy onions.

Work the dough with your hands or a mixer until it comes together smoothly.

On a baking tray lined with parchment paper, make around 14 equally spaced dough balls. Gently flatten each one and sprinkle extra cheese on top if you'd like.

Pop the cookies into a 180°C preheated oven for 20 minutes.
