Mix the flour, sugar, salt, and cold butter together until it feels crumbly. Add in the egg, shape into a ball, and pop it in the fridge for 30 minutes.

Whisk the eggs, sugar, and cornstarch together. Slowly pour in the warm milk while whisking. Cook until it thickens, then stir in the vanilla and a pinch of salt.

Peel and slice the apples thinly. Toss them with sugar, cinnamon, and the lemon juice.

Roll out the dough and press it into a 24 cm tart pan. Prick the base with a fork, lay the apples on top, then pour the custard mixture over them.

Pop it in the oven at 180°C (350°F) for 35-40 minutes, or until the custard sets and turns golden.
