Apple Cinnamon Oatmeal (Print Version)

# Ingredients:

01 - 1 tablespoon water.
02 - Pinch of kosher salt.
03 - 1/4 cup chopped pecans or walnuts for topping (optional).
04 - 2+ tablespoons maple syrup or brown sugar.
05 - 1 teaspoon neutral oil or vegan butter.
06 - 2 sweet apples, diced (like honeycrisp).
07 - 1/8 teaspoon ground nutmeg (optional).
08 - 1/2 teaspoon ground ginger (optional).
09 - 1/2 teaspoon ground cinnamon.
10 - 1/2 teaspoon vanilla extract (optional).
11 - 2 cups quick oats or rolled oats.
12 - 1/4 teaspoon kosher salt.
13 - 2 teaspoons brown sugar or maple syrup.
14 - 2 cups water (use more milk if you want creamier oatmeal).
15 - 2 cups unsweetened dairy-free milk.

# Instructions:

01 - Heat up butter or oil in a small pot on medium. Toss in the diced apples, sweetener, cinnamon, salt, and a splash of water. Let it cook for 5-7 minutes, stirring now and then, until the apples soften and look shiny. Take out half and set them aside.
02 - Into the same pot with the remaining apples, add oats, your choice of sweetener, cinnamon, ginger, nutmeg, salt, water, and milk. Crank up the heat to high until it boils, then drop it to medium. Let it simmer for 5-7 minutes, giving it a stir so it doesn't stick.
03 - Take a bite and adjust the sweetness if you need to. Serve it up with those extra apples on top and a sprinkle of nuts if you like. Put any leftovers in the fridge for up to 5 days. Warm them up later on the stove with milk or water.
