Apple Cinnamon Loaf (Print Version)

# Ingredients:

→ Filling/Topping

01 - 1 1/2 teaspoons ground cinnamon
02 - 1/2 cup packed light brown sugar
03 - Optional: a tiny pinch of ground nutmeg

→ Cake

04 - 1 teaspoon vanilla extract
05 - 1/2 cup softened unsalted butter
06 - 1/2 cup sour cream, bring to room temp
07 - 1/2 cup regular sugar
08 - 2 medium eggs, room temp
09 - 1/4 teaspoon table salt
10 - 1/2 teaspoon baking soda
11 - 1 teaspoon baking powder
12 - 1 1/2 cups plain all-purpose flour
13 - 2 spoons of room-temp milk
14 - 1 peeled Granny Smith apple, cored and sliced into half-inch cubes

→ Glaze

15 - 1-2 teaspoons of hot water
16 - 1/3 cup sifted powdered sugar

# Instructions:

01 - Heat your oven to 350°F (175°C). Place parchment paper inside a loaf pan and keep it to the side.
02 - Stir together the cinnamon, nutmeg, and brown sugar in a small bowl. Set it nearby.
03 - In a big bowl, combine the sugar, butter, sour cream, milk, eggs, and vanilla. Stir until smooth using a whisk or electric mixer. In a different bowl, mix the baking powder, baking soda, flour, and salt. Gradually combine the wet and dry mixtures, stirring gently without overdoing it.
04 - Chop the apple into cubes after peeling and coring it. Hold back some pieces for adding on top later.
05 - Add half the batter to the loaf pan, smooth the surface, and sprinkle on part of the cinnamon sugar mix. Gently swirl using a butter knife. Top with the rest of the batter, sprinkle on the leftover cinnamon sugar, add the reserved apple chunks, and do another knife swirl on the top layer.
06 - Pop the pan into the oven and bake it for around 50-55 minutes. Test it with a toothpick—if it comes out dry, it's ready. Let the baked loaf sit on a cooling rack for 10-20 minutes.
07 - Mix the hot water and powdered sugar in a tiny bowl until smooth and pourable. Drizzle or spoon it over the now-cool loaf.
08 - Leave the glazed loaf for 5-10 minutes, then slice it up and serve.
