Grease an 8x8-inch pan lightly or line it with parchment paper. Put it aside.

Mix your sugars, butter, evaporated milk, and apple cider in a saucepan. Stir constantly over medium heat till it hits soft ball stage (around 234°F or 112°C if you're using a candy thermometer).

Take it off the stove. Stir in the marshmallow fluff, spices, and white chocolate chips. Mix till smooth.

Stir in the dried apple pieces and vanilla extract so that they're evenly spread out.

Pour everything into your prepared pan. Smooth the top with the back of a spatula.

Once it cools to room temperature, pop it in the fridge for 2 hours or more to fully set. When firm, cut it into bite-sized pieces.
