Cheesy Lasagna Soup (Print Version)

# Ingredients:

01 - 1 small onion, diced.
02 - 1/2 pound ground sausage.
03 - 8 ounces mushrooms, chopped.
04 - 2 cloves garlic, minced.
05 - 4 cups fresh spinach.
06 - 5 cups unsalted chicken stock.
07 - 5 lasagna sheets, snapped into pieces.
08 - 1/2 teaspoon dried basil.
09 - 1 teaspoon dried oregano.
10 - 3 tablespoons flour.
11 - 3 tablespoons butter.
12 - 1 cup milk.
13 - 1 cup grated parmesan cheese.

# Instructions:

01 - Heat up a large pot and cook the sausage until browned all the way through.
02 - Toss in the onions and mushrooms. Let them cook 5-6 minutes to soften.
03 - Stir in the garlic with the spinach. Let it cook for just about a minute.
04 - Add the stock to the pot and let it lightly boil for 5 minutes.
05 - Throw in the broken lasagna sheets, plus the oregano and basil. Simmer gently.
06 - Simmer the noodles for 10-12 minutes, till nice and tender.
07 - In another pan, melt the butter. Add the flour and stir for a minute.
08 - Slowly mix in the milk while stirring, and cook until it thickens (3-5 minutes).
09 - Remove from heat and fold in the parmesan until fully melted.
10 - Pour the cheesy sauce into the soup pot. Stir well to mix it all up.

01 - Tastes like lasagna, but super easy.
02 - Make it veggie by skipping the sausage.
03 - Feel free to toss in extra veggies!
